Slow Cooker BBQ Pulled Pork

Dan is not a big fan of barbecue anything. He will eat it, but it isn’t ever anything he craves so this week I wanted to make something with barbecue sauce and test out his taste buds. Result: He really liked it, and told me to add it to our list of recipes to make again- so this is why we are sharing it with you today.

 

Ingredients

  1. 2 medium yellow onions, thinly sliced
  2. 4 medium garlic cloves, thinly sliced
  3. 1 1/2 cup chicken stock or low-sodium chicken broth
  4. 2 Tbsp packed brown sugar
  5. 2 Tbsp chili powder
  6. 1 Tbsp kosher salt
  7. 1/2 Tbsp chipotle powder
  8. 1 tsp ground cumin
  9. 1/2 tsp ground cinnamon
  10. 5LB boneless pork shoulder (also known as pork butt), twine/netting removed
  11. Your favorite barbecue sauce (we used Stubbs Original)
  12. Good bread for sandwiches (thick enough to not get soggy right away)

Directions

  • Place the onions and garlic in an even layer in the slow cooker and pour in the stock or broth
  • Combine brown sugar, chili powder, salt, chipotle powder, cumin,  and cinnamon in a small bowl
  • Pat the pork dry with paper towels
  • Rub the spice mixture all over the pork and place the meat on top of the onions and garlic
  • Cover and cook until the pork is fork-tender, 8 – 10 hours on low
  • Turn off the slow cooker and shred the pork with two forks
  • Strain most of the liquid from the slow cooker leaving a little bit of juice
  • Add as much barbecue sauce as you want (we used half the bottle, and the original recipe from chow.com called for 2 cups)
  • Mix around to evenly cover the meat
  • Take the good bread you bought and put about 1 cup of meat on the sandwich, and top (optional) pickles, tomatoes, lettuce, bacon, or whatever your heart desires.
