Oven Fajitas

Ingredients

Seasoning

  • 1 Tbsp chili powder
  • 1/2 Tbsp paprika
  • 1/2 Tbsp corn starch
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 1/8 tsp cayenne pepper

Fajitas

  • 2 small yellow onions, cut into strips
  • 2 green bell peppers, cut into strips
  • 1 red bell pepper, cut into strips
  • 2 LB chicken breasts, cut into strips
  • 2 Tbsp extra virgin olive oil
  • 2 limes

Directions

  1. Preheat oven to 400 degrees
  2. Mix all of the seasoning ingredients in a bowl and set aside (chili powder, paprika, onion powder, garlic powder, cumin, cayenne pepper, sugar, salt, and corn startch)
  3. Cut the onion and bell peppers into 1/4 – 1/2 inch wide strips and place them in a 9×13 casserole dish
  4. Slice the chicken breasts into very thin strips and add it to the casserole dish with the vegetables
  5. Sprinkle the seasoning over the meat and vegetables
  6. Drizzle the olive oil over everything, then use your hands to toss the ingredients until everything is well coated in oil and seasoning
  7. Take one lime, cut it in half and squeeze the juice over the ingredients and then place the squeezed lime in the corners of the dish
  8. Bake for 40 minutes, stirring once half way through
  9. Once the fajitas are done baking, take the dish out of the oven and use the other lime – cut it in half and squeeze the juice over the ingredients
  10. Toss both limes away in the trash
  11. Guten Appetit!
  12. Optional: Sprinkle with cheese, eat with tortillas, add sour cream – whatever your heart desires
