Chicken Burrito Bowl

We all crave Chipotle, or Qdoba, or Illegal Petes. But some of us are trying to stay away from fast food for the new year. This week was one of those weeks we had a craving so we put together some ingredients that you would find in your typical burrito bowl, just all homemade.


  • 6 chicken breasts
  • Poultry seasoning – to taste
  • 2 Tbsp Olive Oil
  • 1 1/2 cup organic white rice
  • 2 cans black beans, drained
  • 1 container (about two cups) fresh salsa
  • 1 small can chopped green chilies
  • 1 large jalapeno, chopped
  • 1/2 yellow onion, chopped
  • 1 Tbsp cilantro
  • Optional: 1 can of corn
  • Optional: Hot sauce of any kind
  • Optional: Avocado


  1. Preheat oven to 400 degrees F
  2. Rinse chicken breasts, and pat try
  3. Line baking sheet with foil
  4. Add chicken to baking sheet
  5. Drizzle olive oil over chicken breasts
  6. Sprinkle poultry seasoning over chicken for taste, and set off to the side until your oven is ready
  7. Cook your rice according to the package
  8. In a large bowl add black beans, salsa, green chilies, jalapeno, onion, and cilantro to the bowl and mix around
  9. If oven is ready, put chicken in and cook for 40 minutes, flipping half way through
  10. Once rice  is cooked, add to the mixing bowl with the other ingredients
  11. Once chicken is cooked (make sure it is white all the way through- cut through your thickest piece to make sure there is no pink coloring) slice each breast into about 4-6 slices
  12. Add been/rice mixutre to a bowl, and put the chicken on top
  13. One day Dan added hot sauce to his bowl, and another day I added avocado. Corn would also taste great in this dish but we didn’t try it
