Slow Cooker Mashed Sweet Potatoes with Chorizo


  • 4 sweet potatoes/yams, peeled and diced
  • 4 Tbsp grass-fed butter
  • 2LB Mexican chorizo (if applicable, remove casing)
  • 1/2 yellow onion, diced
  • 5 garlic cloves, minced
  • Salt & Pepper for taste
  • Cilantro for garnish


  1. Spray slow cooker with cooking spray
  2. Place diced sweet potatoes in slow cooker
  3. Heat butter in a medium pan, saute onions until translucent, then add garlic for a minute
  4. Add chorizo and lightly brown for flavor
  5. Add chorizo mixture to the slow cooker, add salt and pepper and stir around a little bit
  6. Cook on high for 4 hours, stirring every hour
  7. Once cooked through, turn slow cooker off and mash the sweet potatoes (optional)  – they should be very soft
  8. Guten Appetit!
