Coconut Chicken Curry


  • 8 chicken breasts, cut into chunks
  • 1 Tbsp refined coconut oil
  • 1 can (13.5oz) coconut milk
  • 1 carton (32oz – I think) chicken broth
  • 2 cups carrots, diced
  • 1 cup celery, diced
  • 2 large tomatoes, diced
  • 2 Tbsp curry powder
  • 1 small ginger root , grated (makes about 2 Tbsp)
  • 1/4 cup cilantro, chopped
  • 6 cloves of garlic, mined
  • Salt & pepper to taste


  1. Place your saute pan on medium heat and add your coconut oil to the pan
  2. Once it melts, add our chicken to the pan and cook until the outisde of the chicken has all turned white
  3. Add the chicken broth and coconut milk and mix well
  4. Add the carrots, celery, and tomatoes – cook for 5 minutes
  5. Grate the ginger right into the pan and then add the curry powder
  6. Cook on medium heat with the lid on for 40 minutes, stirring occasionally
  7. Add in the minced garlic and salt and pepper when there is 5 minutes remaining on your timer
  8. Add the cilantro, stir and cook for 5 more minutes
  9. Optional: Dan needed more substance, so I cooked 1 cup (dry) Risi Pasta and added this to the pot when it was al dente
  10. Guten Appetit!
