Baked Burritos

Ingredients

  • 6-9 large tortillas
  • 2 lbs ground beef
  • 1lb ground turkey
  • 1 medium onion, diced
  • 4 bell peppers, assortment of colors, diced
  • 2 handfulls of spinach, diced
  • 1/2 package taco seasoning
  • 1 jar of queso
  • 2 cans refried beans
  • 1 pkg shredded mexican style cheese
  • Sour Cream – optional
  • Guacamole – optional
  • Salsa – optional

Directions

  1. Preheat oven to 400F
  2. Put the onions in a pan and saute until translucent
  3. Add bell peppers and cook for 4 minutes stirring every minute
  4. Add beef and turkey to the pan and cook all the way through (about 10-15 minutes)
  5. Add taco seasoning and spinach to pan and cook for 5 more minutes
  6. Spray a 9×13 glass baking pan with cooking spray
  7. When meat-mixture is done cooking put one tortilla on a plate, microwave for 15 seconds, add a generous amount of refried beans, queso, and shredded cheese to it and then top with the cooked meat mixture
  8. Roll into a burrito and place in the glass baking pan
  9. Do this several more times until you run out of room in the baking pan
  10. Add shreded cheese on top of the burritos and put in the oven
  11. Bake for 15 minutes to crisp them up
  12. Serve with toppings such as sour cream, guacamole, and/or salsa
  13. Guten Appetit
