Egg Scramble

Ingredients

  • 6 eggs
  • 1/2 cup almond milk
  • half a bunch of asparagus, ends cut off, and then cut in half
  • 15 cherry tomatoes, cut in half
  • 7 oz white beans (half a can), rinsed
  • handful of turkey bacon bits
  • half an onion, chopped
  • 1 Tsp extra virgin olive oil (EVOO)

 

Directions

  1. Add EVOO to a skillet and turn to medium heat
  2. Add onion to skillet and cook for 2 minutes stirring occasionally
  3. Add asparagus to skillet and cook until they turn a bright green, about 5 minutes
  4. Add milk and eggs to a bowl and mix until beaten, about 2 minutes by hand for 15 seconds with hand blender and add to skillet
  5. Cook eggs for about 4 minutes and then add in the white beans, and turkey bacon
  6. Cook dish until eggs are scrambled and then add the cherry tomatoes and cook for 2 more minutes
  7. Guten Appetit!
