Crock Pot Chicken Corn Chowder

Ingredients

  • 2 rotisserie chickens, shredded
  • 1 Tbsp butter
  • 1 sweet onion, chopped
  • 2 ribs celery, sliced
  • 2 cups frozen corn
  • 10 baby carrots, sliced
  • 2 cans cream of potato soup
  • 3 cups chicken broth
  • 1 tsp dried dill weed
  • 1/2 cup half and half
  • 1 Anaheim chile, diced

Directions

  1. Add the butter, onions, celery, and carrots to a skillet and sauté until the onions are translucent
  2. While the vegetables are sautéing, shred the rotisserie chicken and transfer to slow cooker
  3. Add vegetable to slow cooker once they are done cooking
  4. Add corn, chicken broth, dill, Anaheim chili, and the cream of potato soup to the slow cooker
  5. Cover and cook on low for 5 hours
  6. In the last 10 minutes, stir in the half and half
  7. Guten Appetit!
