Butternut Squash & Cranberry Quinoa Salad

A quick shout out to Kelli who introduced us to this recipe. Dan didn’t really care for it, but Kyla really enjoyed it cold & for breakfast.

Ingredients

  • 1 large butternut squash, peeled, and cut into bite size pieces
  • 1 dash cayenne pepper
  • 1 dash cinnamon
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Cooking spray
  • 3 cups low sodium vegetable broth
  • 1 cup water
  • 1 tsp extra virgin olive oil (EVOO)
  • half of a sweet onion, thinly diced
  • 2 cups uncooked quinoa
  • 3-4 handfuls spinach, fresh, diced
  • 1/2 cup dried cranberries
  • Drizzle of honey

Directions

  1. Preheat the oven to 400F
  2. Spray a baking sheet with cooking spray
  3. Peel and chop squash into bite size pieces
  4. Place squash onto baking sheet and spray again with cooking spray, season with cayenne pepper, cinnamon, salt, and pepper and give it a mix
  5. Roast for 20 minutes or until squash is tender, flipping half way through
  6. Meanwhile, in a pot – add the vegetable broth, water and quinoa
  7. Bring to a boil then simmer and cover for approximately 13-15 minutes or until the broth/water mixture is evaporated – fluff with a fork
  8. In a skillet add olive oil and onion on medium heat for 3-5 minutes or until onion is translucent
  9. Add squash to the skillet and the spinach to cook until spinach is wilted
  10. Add quinoa to the skillet, mix around and then stir in cranberries at the very end
  11. When you plate it drizzle some honey on top (optional)
  12. Guten Appetit!
