Honey Mustard Pork Tenderloin


  • 2 pork tenderloins, or 4lbs
  • 1 small clove garlic, minced
  • Salt & Pepper, for taste
  • 4 Tbsp grainy Dijon mustard
  • 2 Tbsp honey
  • 2 Tbsp brown sugar
  • 1 Tbsp cider vinegar or balsamic vinegar
  • 1/2 tsp dried leaf thyme, crumbled
  • 1 Tbsp cornstarch
  • 1 Tbsp cold water
  • 5 cups cooked brown rice
  • 2 heads of broccoli, chopped into bite size pieces


  1. Wash and trim the pork and pat dry
  2. Sprinkle pork lightly with salt and pepper
  3. Place pork in slow cooker
  4. Add garlic, mustard, honey, brown sugar, vinegar, and thyme to slow cooker
  5. Turn pork to coat thoroughly to coat thoroughly
  6. Cover and cook on low of 7 hours
  7. When your timer has about a half hour left, cook your brown rice
  8. Remove pork from slow cooker and add cornstarch and cold water; whisk into the juices and cook for 4 minutes
  9. While juice is preparing, finish your rice, divvy it out, and then add a handful of the uncooked or cooked broccoli to each meal
  10. Add juice to the rice, and shred the pork then divvy that up
  11. Guten Appetit!
