Paleo Meat Loaf


Meat Loaf

  • 1lb gound pork
  • 2lb gound beef
  • 1 cup almond flour
  • 2 eggs
  • 1 package of bacon
  • 1 c tomato sauce (recipe below)
  • salt & pepper
  • 2 Anaheim chilies

Tomato Sauce

  • 1 – 15oz can of fire roasted tomatoes
  • 1 1/2 cup roasted red pepper
  • 1/2 onion, roughly chopped
  • 4 cloves garlic, minced
  • salt & pepper


  1. Place your oven rack in the middle of oven and preheat it to 350F
  2. In your food processor blend together all the ingredients for the tomato sauce
  3. In a large bowl use your hands to mix together the ground meats, eggs, almond flour, tomato sauce and salt & pepper
  4. Line the pans with the Anaheim chilies
  5. Separate the meatloaf mixture into two 9 inch cake pans – filling the pans to the brim, as the meat loafs will shrink as they cook
  6. Add any remaining Anaheim chilies on top (if you used all of them to line the pan, that is fine)
  7. Top with slices of bacon
  8. Bake for 45 minutes. Turn the oven to broil to get the bacon crispy, about 10 minutes
  9. With any remaining tomato sauce, top the cooked meat loafs with it and serve
