Buffalo Chicken Pasta


For the Buffalo Chicken

  • 1/2 box of wheat pasta (we used penne)
  • 2 Tbsp coconut oil
  • 2 Lbs boneless, skinless chicken thighs or breasts, cubed
  • 2 garlic cloves, minced
  • 1 sweet onion, chopped
  • 2 large carrots, finely chopped
  • 3 stalks celery, finely chopped
  • 1/2 cup hot sauce
  • salt and pepper, to taste
  • chopped green onions, for garnish
  • red pepper flakes, for garnish

For the Mayo

  • 2/3 cup olive oil
  • 2 eggs
  • 2 tsp lemon juice
  • 1 tsp dijon mustard
  • 1/4 tsp garlic powder
  • salt and pepper, to taste



  1. Cook your pasta according to the boxes directions
  2. While the pasta is cooking, place a large pan over medium heat. Once pan is very hot, add coconut oil and chicken to brown with a bit of salt and pepper. Once chicken has browned and no longer pink, remove from pan and place in a bowl
  3. In that same pan, still over medium heat, add garlic, onion, carrot and celery to the pan to cook. Sprinkle with a bit more salt. Once onion has become translucent, remove from heat.
  4. Now make the quick mayo. Add all mayo ingredients into a blender and turn on high. Once the mixture begins to become thicker, slow the speed on the blender, and then set aside.
  5. Now finish the dish off by adding the pasta to the pan, along with chicken, mayo, and hot sauce to the pan. Mix together and then garnish with green onions and red pepper flakes.
  6. Guten Appetit!
