Week of October 13

In Colorado, Fall is very short and its feels as if we go from Summer to Winter in the blink of an eye. If you ever get the chance to check out the Aspens turning colors from September to October we would highly recommend it. It is breath taking! We were lucky enough to make it up to Leadville this past weekend with two friends and stay in a beautiful cabin. Although a lot of the leaves had already fallen, we got a few good pictures and the whole time we were up there, we felt very blessed to be able to do the things we did. We were able to four-wheel, play games with friends, make s’mores by the fire and just relax.

As for our meals, we kept it pretty simple and did one we have already prepared and tried a new one. Kyla enjoyed the lentil soup, while Dan thought something was missing and needed more flavor. Kyla: Oatmeal, americano

Dan: Egg Sandwich, Whey Protein Shake with Almond Milk, Orange Juice

 

Snacks

Apple with Almond Butter

Sabra – Roasted Pine Nut Hummus

Simply Naked Stacy’s Chips

Garden Tomatoes

 

Lunch

Lentil Pumpkin Soup

Greek Garbanzo Salad with Grilled Chicken (we substituted the grilled chicken for two shredded rotisserie chickens)

 

Dinner

Grilled Salmon with Tomatoes & Basil

Teriyaki Chicken with Fried Rice (No Recipe available, but all you do is season some chicken with your favorite teriyaki sauce and then to make the fired rice we used minute brown rice, 5 scrambled eggs, frozen peas, and soy sauce)
