Grilled Salmon with Tomatoes & Basil


  • 2 salmon fillets – a size you could eat on your own between two people
  • 1/2 cup thinly sliced fresh basil
  • 3 medium tomatoes, sliced
  • 2 cloves garlic, minced
  • Juice from one lemon
  • 1 tsp extra virgin olive oil
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 pieces of foil


  1. Preheat grill to medium
  2. Mash minced garlic and salt in a small bowl and stir in oil
  3. Measure out 2 pieces of heavy duty foil large enough for each salmon fillet
  4. Coat the foil with cooking spray
  5. Place the salmon skin-side down on the foil and squirt the lemon juice all over each fillet
  6. Spread the garlic mixture all over each fillet
  7. Sprinkle the basil on top of each fillet and then add the sliced tomatoes on top of that, overlapping the slices
  8. Add pepper on top and then wrap the foil to secure the juices from running out on the grill
  9. Transfer the salmon to the grill, and cook for 12- 14 minutes or until the fish flakes easily
  10. Guten Appetit!
