Mexican Quinoa Salad with Rotisserie Chicken


  • 4 – 6 lbs rotisserie chicken
  • 4 1/2 cups cooked quinoa, follow package instructions
  • 1 can black beans, rinsed & drained
  • 1 can yellow corn, rinsed & drained
  • 2 red bell peppers, diced
  • 6 scallions, chopped (whites & greens)
  • 1/4 cup cilantro, chopped
  • 3 large jalapenos, diced
  • 1/3 cup lime juice
  • 1 tsp salt
  • 2 Tbsp cumin
  • 1/3 cup olive oil
  • Salt & Pepper to taste


  1. Cook quinoa according to package directions (1 1/4 cups dry) and let cool
  2. Mix beans, corn, salt, pepper, scallions, cilantro, jalapenos, lime juice, cumin and olive oil
  3. Add cooled quinoa and mix well
  4. We ate it both warm and cold – either way is great
