Grilled Salmon in Foil


  • 2 (6 – 8 oz) salmon fillets
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 Tbsp minced fresh rosemary leaves
  • 12 lemon slices (2 lemons)
  • 1/4 cup Marsala cooking wine
  • 3 tsp capers
  • 2 pieces of aluminum foil


  1. Turn on grill on to high heat, and allow time for the grill to warm up
  2. Brush the top and bottom of salmon fillets with olive oil and season with salt, pepper and rosemary
  3. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal
  4. Top each piece of salmon with 6 lemon slices, 2 Tbsp of wine, and 1 tsp of capers
  5. Wrap up salmon tightly in the foil packets
  6. Place on grill over medium-high heat and cook for 10 minutes for a 1-inch thick piece of salmon
  7. Guten Appetit!
