Greek Garbanzo Salad & Grilled Chicken


Grilled Chicken

  • 2 packages thin cut chicken breasts
  • 2 tsp salt
  • 2 tsp pepper
  • 2 tsp celery seed
  • 2 tsp garlic powder
  • 1 Tbsp olive oil

Greek Garbanzo Salad

  • 3 – 15 ounce cans of garbanzo beans, drained
  • ½ medium red onion, diced
  • 1 stalk celery, diced
  • 3 Tbsp lemon juice
  • ¼ cup fresh parsley, finely chopped
  • 2 Tbsp fresh basil, finely chopped
  • 1 Tbsp fresh oregano, finely chopped
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 tsp salt
  • ½ tsp onion powder
  • 3 – 4 medium tomatoes
  • ½ – 1 cup feta cheese



  1. Turn grill on to medium – high heat and allow time to warm up
  2. Mix together the salt, pepper, celery seed, and garlic powder for the chicken
  3. Rince the raw chicken breasts with cold water, and pat dry
  4. Spread olive oil on chicken and then coat with the seasoning mix
  5. Cook on grill at medium heat for 10 minutes (5 minutes on each side) or until cooked through – with a white center
  6. Mix together the garbanzo beans, diced red onions, celery, and lemon juice in a large mixing bowl
  7. Add the fresh parsley, basil, oregano and garlic into the mixing bowl
  8. Stir in the olive oil, tomatoes and feta cheese
  9. Add the salt and onion powder over the entire mixture
  10. Serve at room temperature or chilled
