Ground Turkey & Kale Pasta Dish

Ingredients

  • 1/2 package dried orecchiette pasta
  • 2 lbs ground turkey
  • 1 bundle of Kale, roughly chopped
  • 1 – 8 oz can cannellini beans, drained and rinsed
  • 1 Tbsp lemon juice
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup flat-leaf parsley, chopped
  • 1 tsp extra virgin olive oil
  • Red pepper flakes, as desired

Directions

  1. In a large pot, bring 5 quarts of water to a boil. Add salt to bring water to a boil faster
  2. Once water is boiling, add the orecchiette pasta and cook until just al dente. Reserve in 1/4 cup of water, drain the pasta
  3. Meanwhile, in another large pot, cook the ground turkey on medium – high heat, breaking it up occasionally. Cook until lightly browned ( 8 – 10 minutes)
  4. Add the kale on top of the ground turkey and cook until wilted (2 – 4 minutes)
  5. Combine the cooked ingredients into one pot and then add the beans and parsley. Simmer until the pasta is fully cooked (2 minutes)
  6. Remove the pot from the heat, stir in the lemon juice, red pepper flakes, and olive oil
  7. Top with cheese
  8. Guten Appetit!

If cutting carbohydrates is part of your diet, do not use the pasta, and add more ground turkey
