Chicken with Sweet Potatoes & Zucchini



  • 8 – 10 boneless chicken thighs, or breasts
  • 2 Tbsp Extra Virgin Olive Oil
  • Salt & Pepper – to season each side of the chicken

Sweet Potatoes


  • 1 large zucchini, sliced into circles
  • Added to bowl of sweet potatoes


  1. Heat pan on medium – high heat and add olive oil
  2. Take the chicken out of the package and rinse each breast/thigh with cool water, then pat dry
  3. Place chicken on a flat baking sheet and season with salt & pepper
  4. Place the chicken in the pan once it is warm
  5. Cook each side of the chicken 5 – 6 minutes. Before removing the chicken, cut into the thickest chicken breast to make sure it is cooked all the way through
  6. While the chicken is cooking, poke each sweet potato with a fork 5 – 10 times. Then put them in the microwave for 4 minutes, this allows for easier cutting
  7. Slice each sweet potato into circular pieces and put into a large mixing bowl
  8. Slice the zucchini into the same circular pieces and combine in the mixing bowl with the sweet potatoes
  9. Add coconut oil to the mixing bowl and mix around with your hands
  10. Add salt & pepper to the mixing bowl, mix with hands once more
  11. When you take the chicken out of the pan, add the sliced vegetables to the pan. Make sure the vegetables are only a single layer to fully cook each side
  12. Cook for 5 – 6 minutes on each side, or to preferred texture
  13. Combine all of the cooked ingredients
  14. Guten Appetit!
